Hi Plugster, and welcome to the Cafe
On my version (CS) the paint bucket is in with the gradient tool. Just click and hold on the gradient tool (on the toolbar) and then choose the paint bucket.
If you really want to learn the program then I suggest using Google and searching for tutorials - there are literally millions of them on the Web. This is how I taught myself the program along with taking a few PS classes at www.lvsonline.com
Another good resource is to use the program's own Help section (Help > Photoshop Help). Here you can page through everyhting in PS and familiarize yourself with the program's functions and what each of them does.
I also highly recommend getting the Adobe Photoshop CS3 Classroom in a Book. This book will teach you everything you need to know about the program.
