Heres what I want to do

I want to open a color photo and just paint over certain things to make them black/white.

Make a new layer (the little page icon at the bottom of the layer palette)
Set the layer blending mode to "color" (up at the top left there on the layer palette, where it says "normal")
Press D (resets your colours to the default Black & White... just to be safe)
    Select your brush tool
Paint over everything you want greyscale

Tried both of these with no luck.
Heres what I want to do:
I open an image, then I desat. it, Then I paint over it with a brush. Bingo what I paint over turns to color.
All I want to do is the opposite, I want to paint over a color image and make what I painted turn B/W. I want to be able to see this while I'm painting it.

Phil's Step by Step solution does work. Also Urban's works, just in reverse.

Not sure what you are getting mixed up on.

What version of Photoshop are you using?

You have to copy / duplicate your exiting layer. Try dragging it to the little folder looking icon or right click on the layers pallet and select "duplicate layer" That may give you what you're looking for

Ok I took screenshots of the process.

Let us know if you still need help.

    Step 1
Open the image you want to edit

    Step 2
Select the brush tool from the tools bar at the left, or you can hit "b" (that will do that same)

    Step 3
Now go to "Layer > New Layer" or click the "new layer" icon at the bottom of the layers palette

    Step 4
Select the new layer and change the blending mode to "color"

    Step 5
Finally, with the brush tool start painting away the parts you want to make greyscale (black & white).

Hope this helps you or anyone else.
