Cuting Out Images

I have an image i want to use for a sig how do i cut out certain parts so i dont have excess of things i dont want?

photoshop7:

filters>extract use the highlight tool to highlight what you want to cut out then use the paint bucket to select/fill the area so the computer knows weather you want the inside or outside
other versions:

use the lasso tool hold down the alt key to keep the tool alive (someone correct me if im wrong please)

I use the lassoo tool and then edit the mask in quick mask mode and eliminate the background, or cut and paste the part of the image I want onto another image.
