How do you change the background colour in Photoshop CS2?

What do you mean change like fill it with a solid color? If so take the color you want and use the paint bucket tool.

What i meant was the blank area on the pallette i think you call it the blank bit behind youre photograph.

You mean photoshop's workspace?
Pick a colour (foreground colour) then go to your paint bucket tool (G) Hold SHIFT and click on the work area around the canvas (image).

pick a color and set it to forground in your color palette and ctl/backspace will fill in a new layer/file to your selected color...

oh yea, i am a little muttled tonight but you can set the default colors (bw) by pressing or hitting or banging the "D" key on your keyboard. You can then pick a color via the eyedropper tool or the color palette. By pressing the "X" key you can toggle back and forth between the forground and background colors.
