I am completely clueless on this subject. How do you make shapes in Photoshop where only the borders show, and you can choose which border color you want? How do you make a figure with more than 5 sides? :(

i take it you mean something like a dotted bordered hexagon?

you can make n sided polygons (where n is any number you like above 2) by clicking on that shape type tool next to the pen tool, and then selecting the pentagon shape in the options bar (across the top.) you can also specify the number of sides in the options bar. there are a few groovy optins if you click on the arrow dropdown thing in the options bar.
unfortunately, none of these is border styles.
if you want to do a border, you'll need to do two, with one of them smaller and inside the other.

if you don't understand any of this, i'll post a screenshot for you.

:) this is very easy. I did a screen shot to show you
choose any shape you like in your tool bar
make the settings like circled in the screen capture
you can choose the number of sides in the lil box up right
when you've done a shape (it's a path) go to the path palett and change the path to a selection (the third buttom down from the left) your path will get anty
do edit-fill stroke, there you choose the size of your contour and it will be filled with the foreground color
